2 1/2 (590 ml) cups half and half
8 large egg yolks
1 cup sugar
2 1/2 (590 ml) cups whipping cream
4 teaspoon (20 ml) vanilla

1/8 teaspoon salt
In a saucepan heat half and half to very hot, but not boil, stirring often! Remove from heat, set aside.
In a mixer bowl beat egg yolks and sugar by hand or in the lowest level (wiht the kitchen aid it should be speed 2) about a minute (or until well blended). Continue the beating on the lowest level and gradually add half and half. Return the mixture into the saucepan and cook on medium heat, do not boil! Stirring constantly. It ready when bubbles appear on the edge and mixture is steamy. Transfer the mixture into a big bowl, stir in whipping cream, vanilla and salt. Cover it, and put into the refrigerator for at least 8 hours.
After it chilled thoroughly put it in the ice cream maker, and prepare it according to the machine instruction, or put the mixture into a flat plastic container, put it into the freezer, before it is totally frozen cut into cubes and mix the cubes with a stick mixer, and put it back to the freezer.
